Genetic, nutritional and sensory characterization of locally grown walnut varieties in Trentino as a mean to enhance traditional Italian product

Through a multidisciplinary approach that combined genetic, metabolic, volatile compounds analysis and a satisfaction test, FEM researchers involved in the NoBle project described the genetic profile of the Bleggiana and Blegette walnut varieties, furthermore proceeding to the characterization of the nutritional and volatile compounds to evaluate the health profile and consumer perception.

"This work - explains Prof. Mario Pezzotti, manager of the Research and Innovation Center - draws its strength in the collaboration between the various FEM teams and laboratories: accordingly, it represents a tangible example of how the technological equipment and know-how present in San Michele can support the economic and social development of the Trentino area.

Usefulness of the research
The research provides an important example of extensive characterization applied for the first time to traditional varieties of nuts; this, in order to recognize and promote their added value compared to other more commercial varieties. The study, which has counted on the collaboration of the Confraternita della Noce del Bleggio, makes it possible to promote the cultivation of walnut in the Trentino and Italian territory, laying the foundations for the development of a new market based on a product that is recognizable as local and of high quality.
