The "varietal thiols" are the responsible of the unique aroma of Müller Thurgau wine

Passion fruit, grapefruit, boxwood: these characteristic aromas of Müller Thurgau are determined by the "varietal thiols" - the volatile sulfur compounds responsible for the aromatic profile which in this wine are at higher concentrations beyond the sensory thresholds .

A study of varietal sulfur compounds and their role in contributing to the aroma of Italian white wines carried out by FEM researchers in collaboration with six universities (Bologna, Naples, Padua, Turin, Trento and Verona) revealed that varietal thiols could play a relevant olfactory role for the aroma of Müller-Thurgau wines.

The research has been recently published in the journal Food Science and was officially presented at the opening of the "35th Müller Thurgau International Review: Mountain Wine" scheduled in Cembra last June, 30th.
